Description

L'huître plate Belon (Ostrea edulis) existe en Bretagne depuis des siècles. Elle fît la renommée de " La Paimpolaise du Large" dans les années 60.

 

Depuis le début des années 80, sa production est rendue difficile à cause d'une maladie qui l'a dissipé. "La Paimpolaise du Large" en produit encore un peu en élevage au sol afin de rendre l'élevage plus sauvage et de limiter la perte par maladie.

 

En plus du mollusque lui-même, riche en vitamines et minéraux, l'eau renfermée dans la coquille est également riches en nutriments bénéfiques.

 

La célèbre huître à chair blanche est généralement consommée vivante, sans préparation culinaire.
