Fleur de sel is the thin layer of white crystals that forms by evaporation on the surface of salt marshes. Harvested manually and daily, fleur de sel is a fragile agricultural product whose harvest must be delicate and precise.

So every evening during the summer period the salt farmer picks the fleur de sel using a lasso from the surface of the crystallizer (the salt pans, i.e. the harvesting basins). Once picked, the fleur de sel is then drained and dried in the sun.

Fleur de sel dissolves very quickly, so it perfectly penetrates the foods it seasons. It is for this reason that it is recommended to add it at the end of cooking. In addition to being rich in magnesium and trace elements, its taste is much finer and more delicate than that of table salt.
