Scomber scombrus caught between October and March, during the peak season, the mackerel are processed fresh, cooked in court broth, filleted with scissors then fitted by hand. A carefully prepared marinade, tender and tender fillets, a great classic to accompany boiled potatoes.
Natural mackerel fillet is ideal for light salads.
