Clams and cockles are burrowing and filtering shellfish. The shells of cockles are heart-shaped, ribbed and white, sometimes lightly streaked with brown or black. They enclose and protect the animal, which is the size of a small, fleshy, slightly firm white nut, with a small orange ridge, the coral. It can sink abruptly 1 or 2 cm by retraction of the foot, which anchors it in the sand, enabling it to escape predators.
Clams and cockles, in addition to their delicious iodized flavor, are some of the most energetic shellfish there is.
As an aperitif, stir lightly before opening, serve chilled in small tapas dishes.
