The scallop (Pecten maximus) is one of the finest and most prized delicacies.

Fragile and delicate, scallops must be prepared with care to bring out their full flavour. In sauce, grilled, flambéed or pan-fried: there's no shortage of delicious recipes for scallops! The best-known are: Breton-style scallops (with onions and white wine) and scallops with leeks!
