Description

Bhutan is 72% forested and over 60% of the country is made up of national parks.

Today, Bhutan offsets more carbon dioxide than it produces. In fact, Bhutan is the only country in the world with a negative carbon balance, which guarantees the excellence of its agricultural products.
Black Sansho grows in the central and eastern parts of the country, in wetlands. It grows at altitudes of between 1,200 and 1,600 meters.
Sansho, a member of the rutaceae citrus family, is used to flavor rice porridges served on special occasions and when monks hold ceremonies in private homes. It is also used when cooking meat dishes, particularly offal, because of its fresh, dominant aroma.
Black Sansho is not used in everyday meals like Sichuan pepper, as it does not grow everywhere.

In the past, villagers would treasure this spice as a bargaining chip in exchange for rice from other villages.
Sansho is rare because the tree does not bear fruit every year. Nature, the land, the seasons and the weather dominate its development. In a bad rainy season, the yield is lower; in a light storm during flowering, the yield is catastrophic. The trees grow in rural areas, far from human habitation, in the middle of the jungle. The luxuriant vegetation makes it very difficult to locate.
