In order to produce authentic risotto rice, farmers worked, under the guidance of an Italian Chef, to improve the texture and size of the rice grains of two varieties of rice constituting the ideal blend.
This risotto rice has less viscosity than regular Japanese rice. The rice grains are sorted and calibrated in such a way that only the fleshiest are kept.
This rice is perfect for making risotto with cheese or seasonal vegetables and seafood.
