Description

Fleur de sel is the thin layer of white crystals formed by evaporation on the surface of salt marshes. Harvested by hand every day, fleur de sel is a fragile agricultural product that must be harvested with great care and precision.

So, every evening during the summer, the salt grower picks the fleur de sel with a lousse from the surface of the crystallisoir (the salt pans). Once picked, the fleur de sel is drained and dried in the sun.

Fleur de sel dissolves very quickly, so it penetrates the foods it seasons perfectly. This is why we recommend adding it at the end of cooking. In addition to being rich in magnesium and trace elements, its taste is much finer and more delicate than that of table salt.
