Agar-Agar is a vegetable gelling agent extracted from red algae found on all the coasts of the world : Gracilaria verrucosa or other red algae of the Gelidium type.

Agar-Agar Bio Algae Gastronomes comes from Organic Farming. Its production is part of a global approach to sustainable and ecological production. The processes used respects the environment and preserves all the natural benefits of the algae.

Our biological agar agar is of great purity and exceptional quality. Agar Agar is then used to thicken or gelmany culinary, cosmetic, pharmaceutical or other preparations. Taste and gastronomic interests Thanks to its gelling ability seven to eight times higher than that of animal gelatine, Agar-Agar provides texture and consistency to preparations, whether sweet or salty. Agar Agar is colorless, odorless and tasteless: it is therefore a great asset in your kitchen. In powder form, Agar-Agar is very easy to use. It allows you to make simple creams, sauces, jams, toppings of pies, ice cream, pastries, pudding, confectionery, processed cheese, syrups, mousses, aspics, charlottes, pana cotta etc. It can even be used in terrines or pâté as a vegetal alternative to animal gelatine. It is important to note that Agar-Agar is only eaten cold. Indeed, hot, its gelling power is zero. This, however, facilitates its incorporation into all your preparations.

  • Intérêts nutritionnels

En plus de son utilisation en cuisine comme gélifiant, l’Agar-Agar présente de nombreux intérêts nutritionnels !

En effet, contrairement aux gélatines animales, l’Agar-Agar présente une valeur calorique très faible voire quasiment nulle. Il est donc particulièrement intéressant de l’utiliser dans le cadre d’un régime minceur.

D’autre part, l’Agar Agar contient des vitamines, des minéraux et des fibres. Ces dernières (appelées mucilages) ont des propriétés prébiotiques. Elles entretiennent la flore intestinale et améliorent ainsi le confort digestif.

Enfin, grâce à sa forte capacité à capter l’eau, l’Agar-agar peut également être utilisé comme coupe-faim. La poudre d'Agar-Agar est d’ailleurs recommandée dans le cadre du régime Dukan.

 

À noter : L'Agar Agar bio a une couleur légèrement brune. Cela est du à l'utilisation de process plus naturels qui permettent de conserver la couleur originelle de l'Agar-agar.
