Description
La langouste royale (Panulirus regius ) est principalement pêchée au casier sur des soles rocheux de Bretagne. C’est un mets de choix très prisé pour sa chair savoureuse.
Dégustation
La langouste royale se prépare dans sa carapace. Elle peut être :
- Grillée : Coupez la langouste vivante dans le sens de la longueur et grillez là simplement au four ou au barbecue.
- Cuite au court-bouillon : plongez la langouste dans l’eau bouillante et laissez-là 25 à 35 min au court bouillon selon la taille
Elle peut alors être dégustée simplement avec de la mayonnaise ou préparée à l’armoricaine.
