The pollack ( Pollachius pollachius ) is one the most affordable fish available on the market but also one of the most popular. The pollack is a lean fish highly prized in cooking for its fine flesh and delicate taste. Highly digestible, it is recommended in diets for its low intake in lipids and its high levels of vitamins and minerals.

The flesh has a tendacy to flake quite easily: it is, therefore, not recommended to cook it for too long.
Accompanied with a mustard and sour cream sauce, or simply with some lemon juice or parsley, pollack fillet is most often prepared in the frying pan. It can also be poached, cooked matelote (in white wine) or in a court-bouillon. In papillote, in the oven with fresh vegetables, it is ideal for diets !
With its delicate taste and the little bones it contains, Pollack is perfectly suited for children!
