The dogfish (Scyliorhinus canicula) is a coastal species of the shark family renowned for its tender, pinkish flesh. With no bones, it is very easy to prepare. Very low in fat and highly digestible, it is ideal as part of a balanced diet.

Tasting 

To preserve its flavour, roussette should be grilled, baked or steamed. Dogfish is also very popular pan-fried with a little butter or white wine. For a sauce, dogfish with mustard is a delicious, easy-to-make recipe. The ideal accompaniment for dogfish? Broccoli goes perfectly with the subtle flavours of this little shark.
