You prepare colored cauliflower in the same way as white cauliflower. Start by removing the leaves and washing your colored cauliflower. Then it all depends on your recipe! To prepare your cauliflower as cauliflower semolina/rice: grate it in a food processor like you would grate carrots (cutting it into florets beforehand) to go faster, but using a hand grater works too. Colored cauliflower can be cut into florets: for an aperitif or a cooked dish. You don't necessarily need to use the core, but keep it for a future soup. Some people like to eat them sliced to cook them "like meat". Keep the unsliced parts for a salad, soup... You can also cook it whole to roast colored cauliflower.
