The red mullet belongs to the family Mullidae and has for scientific name Mullus surmuletus. It is often confused with his cousin the "Mullus barbatus". The latter is smaller (10 to 20 cm), paler colors and has a lot less taste. The red coastal barbet of Brittany we offer, is of an average size of 15 to 30 centimeters. Its orange-pink skin is covered with small scales and its whitish flesh is very fine and firm.
The red mullet is considered to be a noble fish. It is widely used in gourmet restaurants for its high taste qualities. red mullet cooked in the oven is a simple and easy way to prepare this fish, which in addition, is very appreciated and renowned for its exquisite flavors !
Red mullet fillets are specially delicious when marinated in lemon and served raw with a salad ....
