Used whole or in powder form, the flavor of coriander seeds is reminiscent of the peel of a bitter, slightly sweet citrus fruit, their scent that of a freshly squeezed orange. In powder form, it can be added to fruit salads, orange slices, apple tarts or simple vinaigrettes.
In the kitchen, coriander seeds are perfect for savoury dishes with a sweet accent, such as duck, in a ketchup sauce, or to flavour chutneys. They can also be used to flavour vinaigrettes or pickled vegetables, as in pickle jars.
Although discreet, coriander seed is an essential ingredient in many spice blends. You'll find it in most curries, like our curry, Ras el Hanout or Colombo powder. Remember to combine coriander with cumin seed, as it adds a lot of sweetness and roundness to the latter.
