The red mullet belongs to the family Mullidae and has for scientific name Mullus surmuletus. It is often confused with his cousin the "Mullus barbatus". The latter is smaller (10 to 20 cm), paler colors and has a lot less taste. The red coastal barbet of Brittany we offer, is of an average size of 15 to 30 centimeters. Its orange-pink skin is covered with small scales and its whitish flesh is very fine and firm.
